Ingredients :
For the Koftas
:
Potatoes – 3-4 medium sized, boiled, peeled and mashed
Paneer – grated – ½ cup
Carrot – grated – 3-4 tsp
Cornstarch – ½ cup
Ginger-garlic paste – 1/2 tsp
Green chillies – 2 , finely chopped
Salt and Pepper as per taste
Cilantro – finely chopped
Oil for frying
For the gravy-
Onions – 4-5 medium sized, chopped
Cashews – ¼ cup
Almonds – ¼ cup
Paneer – grated, 2 tsp
Tomatoes – 3-4 medium sized, chopped
Capsicum / Bell pepper – 1 medium sized, chopped
Red chilli powder – 1 tsp
Garam Masala Powder – ½ tsp
Ginger garlic paste – 1 tsp
Green chillies – 1 finely chopped
Raisins - ¼ cup for garnish
Cilantro – for garnish
Fresh cream – 2 tsp for garnish
Bay leaf – 1
Cardamom – 1 pod , crushed
Oil
Salt to taste
METHOD

Mix all the ingredients for koftas and divide into koftas. Deep fry in hot oil till golden brown / alternatively bake in preheated 350F oven till golden brown.(Add more cornstarch if you think the koftas would break).Drain in paper towel and keep aside.
For the gravy, in a pan, heat 1 tsp oil, add Onions and sauté till golden brown ,
Add Cashews, Almonds , Capsicum / Bell pepper ,paneer, Red chilli powder , Garam Masala Powder, Ginger garlic paste, Green chillies and tomatoes.
Sauté till tomatoes are well cooked .
Cool and grind into a paste.
Add the paste to the pan again, Add salt, bay leaf and cardamom. Add a little water. Let is cook for 2-4 minutes.
Just before serving, place the koftas in the serving dish and pour the gravy over the koftas.
Garnish with fresh cilantro / coriander , fresh cream and raisins.
Serve hot with chappati . naan or rice
