Wheat Free Cherry Cocoa Muffins

Ingredients
1 15 oz can cherries, drained and coarsely blended
3 large eggs, beaten
1/2 cup yogurt
1/2 cup coconut oil, melted gently
1 tsp vanilla
3/4 cup honey
1/4 cup oat flour
1/2 cup coconut flour
3/4 cup pecan meal
1/3 cup cocoa nibs, ground to coarse powder
1/3 cup dehydrated cherries, ground to powder
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
Method
Preheat oven to 400 degrees. Line or paper 8 large muffin cups. In a medium bowl, mix canned cherries, eggs, yogurt, coconut oil, vanilla and honey then set aside. In a large bowl, combine oat flour, coconut flour, pecan meal, ground cocoa nibs, ground dehydrated cherries, baking powder, baking soda and salt. Pour wet mixture into dry mixture and stir only until combined. Evenly distribute batter among muffin cups and bake 18-20 minutes. Let cool 5-10 minutes before serving.
